Bruschetta with Roast Smoked Turkey, Sunblush Tomatoes and Buffalo Mozzarella
Ingredients (Serves 2)
1 Medium French Stick
Extra Virgin Olive Oil
100g Buffalo Mozzarella
20g Pitted Black Olives
60g Sunblushed Tomatoes
4 Slices Butter Basted Turkey Breast (cut into strips).
Fresh Basil Leaves
Method
1. Pre-heat the oven to 190°C / 375°F /Gas 5.
2. Cut 4 thick slices of the French stick at an angle to give longer slices.
3. Drizzle both sides of the slices with olive oil.
4. Place on a baking sheet on the middle shelf of the oven and bake for 10 – 12 minutes turning halfway through.
5. Leave to cool on a wire rack.
6. Drain and slice the mozzarella and slice the olives.
7. Arrange the mozzarella, tomatoes, olives and turkey strips on the bread slices.
8. Rip the basil leaves and scatter over the bruschettas.
9. Drizzle each one lightly with olive oil.
This recipe makes a great party canapé too. Just cut everything a bit smaller, and use smaller discs of bread!
