Italian Chicken Salad
Ingredients (Serves 4)
3 packs Butter Basted Chicken
1 Onion, coarsely chopped
2 Tbs White Wine Vinegar
1 Tsp Oregano
50g Black olives, pitted, crushed
50g Stuffed olives, sliced
2 sticks Celery, coarsely chopped
4 Tbs Extra Virgin Olive Oil
1 Tsp Sugar
Salt & Pepper
Method
1. Shred the chicken.
2. Saute onions, and celery in olive oil until soft.
3. Add chicken, mix well with all other ingredients until warmed through. Serve cold or hot.
Italy in a bowl! To make a more substantial meal serve with warm ciabatta. Ring the changes with single varietal olive oil.
