Chilli Beef Noodles    

Chilli Beef Noodles

Ingredients(Serves 4)

Beef

Large Pack Beef Chunks
Dried Egg Noodles( allow 1 noodle ‘cake’ per person)

Sauce

500ml Stock Syrup (250g Sugar dissolved in 250g Water) 
1 Shallot
40g Red chillies, seeds removed(wash hands afterwards)
5  Fat Cloves Garlic
5g Fresh Coriander
20g Grated ginger
Juice of half a lime

Method

1. Put all sauce ingredients in a food processor. Pulse until well chopped but not pureed.
2. Gently heat the sauce ingredients in an uncovered saucepan. Ensure all the sugar dissolves.
3. Place the beef chunks in a bowl. Add some of the sauce to taste depending upon how spicy you like it. Mix by hand then add the whole contents of the bowl to a pre-heated frying pan.
4. Fry with very little oil (if necessary) until the beef has slightly crisped.
5. Follow the pack instructions to make the noodles.
6. Top the noodles with the Chilli Beef and serve whilst piping hot. Add more sauce if desired.

Chefs Tip
Wash hands thoroughly whenever handling chillies. The chemicals within are very irritable and will cause discomfort if in contact with eyes or sensitive skin. 

Don’t be scared of the amount of chilli in this dish, it’s delicious! Any sauce left can be simmered for 15 minutes to reduce and then use as a sweet chilli dipping sauce. This will keep in the fridge for up to a week.
